Simple and Healthy Salad Dressing

Some salad dressings contain preservatives, artificial flavors, and colors. Many need to be preserved in a refrigerator. A quick and easy fix is to buy a bottle of your favorite dressing from the market and pour as needed. Guess what? It takes less than that to make your own dressing…..Fresh!

Base of your dressing

A dressing’s base primarily determines its taste, thickness, and moisture. An ideal base would allow appropriate blending of flavors of other ingredients. We use plain homemade yogurt as the base. A fresh yogurt is pretty bland (tips on how to change the taste of plain yogurt), thick and moist allowing for a great base for your salad dressing. For people with lactose intolerance or who simply do not like milk-based products, other yogurts (soy, rice, coconut, almond) can be used.

Oil

Addition of oil into a salad dressing results in intensification of certain flavors such as pepper, salt, and lemon. Furthermore, oil in the salad greatly improves its taste.

Other Ingredients

Once you have finalized dressing base with or without oil, it is time to add ingredients. These range from plain salt and pepper, vinegar to anything that comes into your mind. Make sure to add ingredients in smaller quantity to achieve exact taste.

Simple Salad Dressing Using Plain Yogurt as Base (dresses a salad for two)

Plain Homemade Yogurt- 2 scoops.

Olive Oil- 2 tablespoons or per taste.

Crushed Pepper- to taste.

Iodized Salt- to taste.

Organic Tahini, unsalted- 1 teaspoon

1) Take out two medium scoops of plain homemade yogurt into a bowl.

2) Pour two tablespoons of Olive oil into the yogurt.

3) Add crushed pepper and salt to taste.

4) Add one teaspoon of Tahini. One may replace Tahini with Peanut butter or Balsamic Vinegar.

Using a whisk, mix thoroughly until all contents blend well. You can leave it at room temperature for an hour or so until ready to mix with your favorite salad.

Tips:

-Straining the yogurt through cheesecloth makes it thicker (Greek yogurt) and enhances stickiness of the dressing. Adjust the amount of oil to maintain liquidity. One may add vinegar to change sourness or thickness.
