Making Cherry Cake!

As you learned about our Cherry picking efforts, we came home with ripe, delicious cherries. After a day of cooling at home, we washed them and upon opening, a fully ripe fruit was noted. I told my dad that I want a Cherry Cake! He agreed to help me make one!

My favorite Cake flour is Swan’s pre-sifted flour. I also used salt, baking powder, powdered sugar for even mixing, butter, cherries, milk, and heavy cream.

1.5 cup Swan’s pre-sifted Cake Flour. We sifted it once more.

1 cup powdered sugar

1 pinch salt

1 tablespoon vanilla extract.

1 cup butter

1 cup cherries

½ cup milk

1 cup heavy cream

½ cup powdered sugar for the cream mixture.

½ tablespoon vanilla extract.

We melted butter at room temperature and added sugar. Using a whisk, I mixed it well. After sifting the flour, we added salt, baking soda and vanilla and gradually mixed butter and sugar mixture along with milk. Dad crushed cherries to remove extra juice and then added cherries to make the final mixture.

Then we heated the oven at 350 F and added a small quantity of cake mixture to baking pans and made three such rounds of cake. We baked them for 18 minutes and they were ready. 

While the cooled down, we poured heavy cream, vanilla extract, and powdered sugar in a mixing bowl and whisked until the topping was ready. This was quite tedious for me! Then I layered cake and cream and gave a final touch to the cake.

After cooling it for 30 minutes it was ready to enjoy! We did not use eggs and therefore the cake was a bit dry but I loved it as it mixed with cream.
